So just in case you are still not convinced that these oven roasted cherry tomatoes and this chunky coriander and cashew pesto have a 101 uses, here is yet another example. This pesto steak sandwich is quick, simple and delicious and makes a great lunch for one in front of the tv on a lazy weekend :-)

  • 2 slices lightly toasted Rosemary Sourdough (I bake my own by adding 2 tablespoons of chopped rosemary to this recipe)
  • Caramelised onions (as little or as much as you like)
  • Chunky coriander & cashew pesto (as little or as much as you like)
  • Roast tomato relish (recipe follows)
  • Handful of green butter lettuce leaves (washed & dried)
  • 100 grams scotch fillet steak
  • Olive oil
  • Salt & pepper to taste
  1. Rub steak with olive oil and season with salt and pepper.
  2. Cook to your liking (I prefer mine medium)
  3. Assemble sandwich by spreading one slice of bread with pesto. Top with caramelised onions, cooked steak, tomato relish and lettuce and the remaining piece of bread.

Roast Tomato Relish

  1. Combine all ingredients in mini food processor and pulse until thick and chunky.

I love how you have brought in some older posts to create this sandwich! Looks delicious and pretty simple to make (even if you don’t make your own bread!)
